Russian restaurateurs warned of price increases

Against the background of Russia's military special operation in Ukraine, the weakening of the ruble and the disruption of logistics, Russian restaurateurs expect a rise in price for the menu. As Sekret Firmy found out, in some establishments prices have already risen by 20%, but at the same time, public catering operates at a loss. Entrepreneurs cannot predict how long the crisis will last. They expect that in a week the price situation will be clearer.

Sanctions and currency fluctuations hit a number of Russian restaurants. And the problem is not only the rise in price of imported products, noted the founder of "Meat & Fish" Sergei Mironov. According to the entrepreneur, his establishments offer only Russian meat, but domestic producers also raise prices following the jump in the dollar.

“Prices are rising and will continue to rise. The problem is both in the dollar exchange rate and in logistics, which is violated. Further growth will be necessary: as the cost of products increases, so the menu will rise in price. But restaurants will work with this, because in any case, the exchange rate will stabilize over time, ”said the businessman.

Roman Rozhnikovsky, the founder of the Rabli restaurant chain, said that prices have already increased in his establishments.

“Our prime cost has already increased by 20% on average. And this is taking into account that we do not use gourmet ingredients, such as foie gras and oysters. For many items, we have received notice from companies that prices will be increased from the next delivery. This applies to the most ''prosaic'' goods - buckwheat, salads, etc.," the restaurateur said.

According to Rozhnikovsky, the crisis in the restaurant industry will worsen in the future, since in addition to the problem with the exchange rate, sanctions may cause serious disruptions in the supply of products.

“Unfortunately, there is more to come. We are preparing for the fifth wave of the crisis, but so far the level of this wave is unclear. What mood people will have is unclear, but it is clear that prices will rise strongly, and some goods will simply disappear, ”he added.

According to Oleg Podgorny, general director of the Shokoladnitsa cafe chain, neither restaurateurs nor suppliers are aware of what will happen to prices. But his company has already had to change the price tags for some items on the menu.

“Raised by several positions by 10%. Where there is beef and cherry tomatoes. For now, that's all, in a week everything will be a little clearer, ”said Podgorny.

Stanislav Lisichenko, the owner of the Chinese News restaurant chain, also warned about the rise in prices. “Our prices will certainly rise, so the prices for absolutely all imported products have already jumped by 10-30%. Soon they will jump to domestic ones, ”the restaurateur promised.

Earlier, The Secret reported that the Traube Bietigheim restaurant in Germany restricted entry for Russian citizens. The owner of the establishment said that visitors with a Russian passport are not allowed to enter. He acknowledged that ordinary citizens are not to blame for the decisions of the government, but, according to him, "the time has come to take some step." However, the Germans were not impressed by this decision. And the owner of the establishment was forced to back down.
