The pandemic highlighted the additional advantages of the franchise in the restaurant business, said Sergey Mironov, Vice-president of the Federation of Restaurateurs and Hoteliers of Russia, the ombudsman of the Moscow restaurant business in the press center of the NSN.

"One of the good trends is the development of the franchise, this is a logical trend. When you open a new restaurant, you take a very big risk – 9 out of 10 restaurants close, it's inevitable. While the franchise still has clear technologies, it can be counted. When you buy a franchise, you can understand what will happen to your restaurant tomorrow. There is a minus of creativity, but a plus of business, because you can make some kind of calculation. Of course, when a restaurant operates under a franchise, due to the fact that all processes are streamlined, work with suppliers is established, there is no need to reinvent the wheel, you take a ready-made model and follow it," Mironov said.

Due to rising prices in restaurants, the number of visitors in 2022 may decrease by 5-10%. This was stated earlier by the founder of the Teremok network Mikhail Goncharov in an interview with the Telegram channel of the NSN Radio channel.
