It is impossible to teach to employ

The professional level of Russian restaurant managers remains extremely low, which means that the country needs to introduce state certification of managers in the field of public catering. This proposal was made by the Vice-president of the Federation of Restaurateurs and Hoteliers of Russia (FRiO) Sergey Mironov.

"Times have changed, the economy has gone ahead, and working as a manager in a restaurant by touch, as it was possible a few years ago, will not work today. The second question is: how to help this? In my opinion, it is worth connecting the state. To introduce mandatory certification of such employees," Sergei Mironov said on his Facebook page.

According to the restaurateur, in parallel it is necessary to launch motivational programs that would encourage restaurant managers to study. Tuition for the first few years could be paid by the state. At the same time, there should not be a system when everyone is forced to study, and then they will collect money.

As explained by Sergey Mironov RB.RU so far, no official letters with proposals have been sent to the authorities.

"So far it's just an idea. We will discuss it within the framework of the FRiO," the restaurateur explained.

Mironov added that the restaurant market in Russia is developing by leaps and bounds, the average restaurant in Moscow has long been ahead of the average European one, but, as a rule, only in cuisine.

It is extremely difficult to find managers: candidates do not have a specialized education, do not want to develop, and at the same time the salary level reaches 200 thousand rubles a month, the expert added.

"At the same time, a person has zero knowledge. Everything is on top — he is not thoroughly savvy in gastronomy, nor does he "fumble" in the bar, nor in marketing. Yes, he has experience as a manager, but very narrow, in several restaurants, most of which have already closed as a result. And, friends, today this is a very real picture," wrote Sergey Mironov.

A specialist applying for the position of a manager must necessarily have a basic education, otherwise the situation with personnel will only worsen day by day.

An active discussion unfolded under the post of the famous restaurateur. In a few hours, she collected more than 200 comments. Mironov's subscribers were outraged that the restaurateur offered to turn to the state, which could increase its impact on the industry. Some participants complained that they had received several specialized education at once, but still could not find a job. Others reported that they left the restaurant business due to instability against the background of covid restrictions.
