"Public catering" does not sleep

The cash turnover in the Russian general catering in 2019 turned out to be record, exceeding the indicators of 2018 by 8.4%, the report of Rosstat, which was read by the NEWS.ru.

In December 2019, the amount of purchases in this segment of the food industry amounted to 167.7 billion rubles, and in 12 months showed a record 1.66 trillion rubles. In 10 years, the turnover of public catering in the country has doubled.

As a rule, Russians start visiting cafes and restaurants on a massive basis, as well as ordering products for home and work in February, and record spending falls on December. Then there is a sharp decline, which again replaces growth by an average of 5-6% per month.

The main driver of the food industry today is fast food, this global trend and reflects the evolution of the domestic market, said Sergey Mironov, Head of the Committee on Restaurant Business of the Moscow Branch of Business Russia.

The increase is there, but not where we would like. It 's in fast food, in a low price segment. It 's daily consumption, nothing more. We need good restaurants to become attractive to the tour stream from Europe. World practice says gastronomy is a boost for the market. And in this segment there is a fall. Fast food develops primarily because it is cost-effective, unlike gastronomy. But that doesn 't mean people today prefer fast meals to the restaurant.



Every year, fewer Russians cook and eat at home. And the trend for delivery as a channel of sales will continue, said Igor Bukharov, President of the Federation of Restaurants and Hotels of Russia.



Delivery works well, its growth is constantly doubling. Turnover is increasing because tourism is developing, gastronomic addictions are changing. People understand that in the restaurant you can eat modestly, rather than go to the institution as a holiday. Russians will continue to buy ready-made food home instead of going to cafes. Young people already have this trend.

Pizza and sushi, Mironov noted, account for about 80% of the volume of all orders. However, this is a tiny share of the food market, which already leads to difficulties for delivery workers who cannot increase profits.

The companies initially made large investments, planning to carry everything, including food from restaurants. But the cost of their services for such institutions was high - 30%. And the economy reeled. Today, if the institution earns 7% of the turnover by year, it is very good. Once there were 15–20%. At the same time, many fast food networks began to develop their own transportation channels. As a result, the delivery workers remained in their field, competing with the networks, - Mironov stressed.

Rosstat defines the turnover of public catering as revenue from the sale of its own culinary products and purchased goods without cooking to the population for consumption mainly on the spot, as well as business for sale to various segments of the population.

Indicator studies are presented in retail prices, including surcharge and value added tax, and are based on data federal statistical observation.
