The Moscow commissioner in the field of restaurant business, Sergey Mironov, told the radio station "Moscow Speaks", which public catering establishments have increased revenue.

We are talking about canteens in office centers and cafes with delivery. According to him, employees of enterprises do not go to restaurants now because of QR codes, but prefer to have lunch in canteens. And restaurants with the delivery function have only increased revenue - most Russians who do not have QR codes make orders online or for takeaway.

"There is a completely different category, these are restaurants that do not have a summer veranda, they have significantly sunk in revenue. When we say 50% or 20%, 80%, we definitely do not see the overall picture, we are pulling everyone out in one line. There is a drawdown and a very significant drawdown for a number of restaurants. Twice — this is such an average temperature in the hospital, it does not reflect reality in essence, " Mironov said.

Among those establishments that have suffered the most are restaurants of professional cuisine, gastronomic. But fast food outlets do not experience any special difficulties due to the restrictions imposed.

According to Mironov, in such a situation there is a risk that restaurants with a professional approach to cooking will eventually disappear from the market.

"A restaurant that worked for a month in a big minus, when it owed rent, for staff salaries, for food, closed — many people will not be able to open. Restaurateurs do not see the point in opening today, because every blow, every lockdown, every closure requires a lot of money to recover later... If you sell burgers or shawarma, it's okay — you closed your tent, then opened it, " he added.

According to a study by the company "Check Index", sales in restaurants in Moscow have halved after the decision of the authorities to introduce QR codes. The average check in the capital amounted to 1,105 rubles - 10% lower than last week. The volume of sales fell by 51%, and online sales increased almost 2.5 times.

Since June 28, entrance to public catering establishments is possible only by QR codes. They can be received by officially ill, vaccinated or provided with a fresh PCR test. The entrance to the summer verandas remains free for now.
