Will dishes in domestic catering become more budgetary



Restaurants are having difficulty supplying groceries. We are talking about vegetables, salads, fish, sauces, syrups. This was reported to Izvestia in the Federation of Restaurateurs and Hoteliers of Russia (FRiO), and also confirmed in the restaurants Ginza Project (Uilliams, Carlson, Butler, Buono), Shokoladnitsa, Yakitoria, and others. There are several reasons - only goods they stopped supplying, conditions are put forward for others that force the public catering to look for other suppliers, and this takes time, experts explain. To meet the needs of the domestic market, including catering, the Ministry of Agriculture initiated the zeroing of import duties on the vegetable group until September 30, Izvestia was told in the department. The corresponding decision has already been made at a meeting of the Council of the Eurasian Economic Commission.



Scarce Component

In the Federation of Restaurateurs and Hoteliers of Russia, Izvestia was told that catering establishments faced interruptions in the supply of products. We are talking about vegetables, salads and some types of fish, explained vice-president of the organization Sergei Mironov.

Indeed, now there are difficulties with the purchase of certain groups of products, Alexander Muratov, development director of the company that owns the Yakitoria brand, agrees. According to him, some of the partners have suspended deliveries. They also made changes to working conditions, for example, reduced the grace period for payments or canceled it altogether.

According to him, the assortment and purchase price of alcoholic beverages have changed the most due to interruptions in logistics. While stocks of alcohol should be enough for 3-4 months, said the restaurateur. According to Yakitoria, the purchase price of many goods increased by 30 to 80% depending on the category.



- We see interruptions in the supply of various categories of goods, mainly ingredients - sauces, syrups, pasta. They are important parts of dishes, you can’t do without some ingredients,” said Oleg Podgorny, General Director of Shokoladnitsa.



The press service of Ginza Project Moscow confirmed the difficulties with deliveries, but did not specify which products this concerns.

Now there are interruptions in the delivery of fish from Turkey, in particular sea bream and sea bass, said Ivan Vasilyev, general director of the Vasiliev Brothers food supplier. In addition, there are shortages of sugar inside the country, he added.

“In order to be able to prepare dishes from the menu, restaurants need to have stocks, which is extremely difficult to do with regard to fresh products, which make up a significant part of the menu,” Sergey Mironov noted.

The Tigrus Group holding (Osteria Mario, Shvili, Zest, Bar BQ) has chosen this path. According to owner Henrik Winter, the company managed to avoid supply disruptions and shortages by booking products with suppliers months in advance. We are talking about the import of alcohol, olive oil, capers, olives, said the businessman.

According to restaurateurs, they have to change positions on the menu. For example, "Shokoladnitsa" and "Tanuki" are developing a menu of more budgetary dishes. Restaurants replace imported ingredients with analogues of Russian production and the CIS.



Supply disruptions can occur not only due to the lack of goods, business representatives noted. Unnecessarily high prices can be set for products, and such purchases have to be abandoned. According to Oleg Podgorny, the company is forced to look for new suppliers for problematic goods, because current partners have set new working conditions - a significant increase in cost and prepayment.

Prices are inflated not by suppliers, but by manufacturers. This leads, for example, to interruptions in the supply of sugar, Ivan Vasiliev noted. For the same reason, the company refuses to purchase Russian vegetables in favor of imports - the prices for the domestic product have increased, according to him, by 60-100%.

Sergei Mironov noted that disruptions in supplies relate to both imported and domestic goods. A decrease in the volume of imports leads to an increase in demand for the Russian product, and it may not be enough, hence there is a shortage and prices rise.

— Market participants name other reasons for the rise in prices for our product. Despite the fact that Russian producers are interested in selling perishable vegetables, their cost is growing due to imported components, which are present in different proportions in the production of all vegetables and herbs, a source in the fruit and vegetable market told Izvestia.

Given the growth in the exchange rate, manufacturers now need to earn more money for a new, more expensive purchase, so they raise prices, the source explained.



Now domestic vegetables are consumed, which were harvested in the fall, and this is not much, said Irina Sheiko, executive director of the Fruit and Vegetable Union. Therefore, the share of imported vegetables is growing every month, and a number of problems are associated with them. Firstly, with logistics - not all countries are ready to transport vegetables to the Russian Federation vegetables due to sanctions. Secondly, a strong rise in prices for them as a result of a rise in the price of the currency: all contracts for their purchases are in dollars.

“However, at present, the market is being reoriented, increasing the volume of imports from friendly countries, which will eliminate the risks of shortages and a decrease in the range of vegetable products,” Irina Sheiko is sure.

According to the Ministry of Agriculture, vegetable production is growing in Russia. Since the beginning of the year, 278.6 thousand tons of them have already been grown in winter greenhouses, which is 10.9% more than in the same period last year. Including the harvest of greenhouse cucumbers amounted to 174.6 thousand tons (+8.8%), tomatoes - 86 thousand tons (+14.1%).
