The price increase in Moscow restaurants for six months amounted to 20% - Sergey Mironov
The increase in prices in the restaurants of the capital over the past six months amounted to about 10-20%. This was announced to TASS on Thursday by Sergey Mironov, Vice-president of the Federation of Restaurateurs and Hoteliers, public ombudsman in the field of restaurant business in Moscow.

"Restaurants never raise prices quickly - they have a very long swing. Because it's menu replacement, menu reprint, evaluation, analysis of everything that happens. Therefore, restaurants always react to the increase in cost for a very long time. <...> And besides, everyone looks at the situation [and] from the position of the consumer. <...> These are smooth things - over the past six months, probably, everything has risen by about 10-15-20%," Mironov said.

He noted the rise in food prices for a number of reasons. One of them is the coronavirus pandemic, because of which "some chains have stopped, enterprises have stopped somewhere." "These jumps happen all the time. At the same time, there is both a general increase in prices and an increase in prices for a separate product. For example, in six months the octopus that was supplied to restaurants has grown more than 2-2.5 times. Indonesian octopus has become 2.5 times more expensive," Mironov said.

According to him, the price increase in 2022 may be proportional to the dollar exchange rate. "All the logistical problems that were associated with the "crown" have already happened. Everything has more or less stabilized for suppliers, because price jumps [occur] for two reasons - this is a logistical reason, because something was not brought, did not go to us, and the exchange rate. Now all changes will be related only to the exchange rate," Mironov said.

According to the agency interlocutor, stimulating work with domestic products can restrain the price increase. "Chinook is caught in Kamchatka. That is, it is king salmon (one of the names of chinook salmon - approx. TASS) - the best salmon in the world. It does not enter the Russian market at all. Sockeye salmon are caught in Kamchatka. Sockeye salmon is large, elite and there is everything else. First we give the elite large sockeye salmon to Asia, and then, according to the residual principle, the rest comes to us. If we revise this policy, work with our water resources so that the priority is on the local market, it will have a very serious impact," Mironov said.
