On April 1, the traditional season of summer verandas starts in Moscow. "Vecherka" learned about the features of the sites this year.

The weather is not warm yet. But restaurateurs are already gearing up for the upcoming spring-summer season.

Catering establishments have been allowed to install verandas since mid-March. In total, there are more than 3,300 open areas in the layout. An innovation last year was the opportunity for entrepreneurs not to dismantle the structures of seasonal cafes placed according to individual projects. Almost three dozen establishments were allowed to leave them for the period from November 15 to March 15.

- The regulation was introduced following business requests that expensive structures are difficult and financially costly to dismantle and store. As of today, 27 catering establishments in the city have received the right to preserve the construction of verandas,” explained Alexei Nemeryuk, First Deputy Head of the Office of the Mayor and the Government of Moscow, Head of the Department of Trade and Services.

Restaurateur Sergei Mironov notes that the current season in public catering will bring changes.

“The industry will not go anywhere, restaurants and cafes will continue to work, and people will go to them,” he noted, adding that fine dining establishments may experience certain difficulties.

According to him, the changes will affect the pricing policy of establishments. Some products will have to be replaced. The menu will also be updated for the warm season. However, restaurants will continue to rely on high service.

Unusual service formats can be developed. For example, when you pay for the entrance, and the price includes dishes at cost.

“The visitor pays from 150 to 700 rubles and receives prices on the menu at the store level,” says restaurateur Alexander Kan.

As the chairman of the Federation of Restaurateurs and Hoteliers of Russia Igor Bukharov noted, the culture of consumption and visiting restaurants has been actively developing in Moscow in recent years.

— The capital received all kinds of food halls, equipped summer verandas, restaurants for every taste and budget of guests. New technologies have also come to us,” added Igor Bukharov.

For example, now seasonal cafes can be heated with beautiful heaters. To maintain business, Igor Bukharov appealed to the city authorities with a request not to clean the verandas for the winter in private areas, to allow catering establishments to set up up to five small tables without approval.

BY THE WAY

The authorities plan to continue the experiment on the operation of parklets - compact recreation areas. They are installed in some parking spaces. A year ago, three sites were equipped in Nikitsky and Daev lanes, on Pyatnitskaya street. In 2022, they can be arranged in the center.
